Gâteau aux clémentines et orange pochées (sans beurre ni gluten)

Poached Clementine and Orange Cake (Butter and Gluten Free)

Ingredients :

- 1 orange and 2 organic clementines, untreated after harvest

- 6 eggs

- 200 g of caster sugar

- 250 g of almond powder

- 1 cache of baking powder

- Juice of 1 lemon + 2 tbsp of powdered sugar

RECIPE :

1) Cover the clementines and orange with water in a small saucepan and boil gently for 1 hour 30 minutes (removing the stalks). Remove the water and let cool slightly. Puree with a hand blender.

2) Turn on and preheat your oven to 180°c.

3) In a bowl, beat the whole eggs, add citrus puree, almond powder, sugar and yeast. Mix well at each stage.

4) Butter a small cake tin, pour in the mixture and bake for 1 hour.

5) Remove from the oven and sprinkle with the lemon juice/sugar mixture.
